Hello All, Just wanted to give you the dish I will be doing for my upcoming blog post. I am in the process of procuring some of the ingredients I need, I just wanted to give a teaser.......We will be learning how to make a rip off dish from the one and only Thomas Keller. It is his signature canape at his Yountville, CA restaurant The French Laundry. He calls it "Cornets" with Salmon Tartare and Red Onion Creme Fraiche. My version will be Spicy Tuna Tartare with Sesame Cornet, Wasabi Foam, Soy Gelee, and Sesame Oil Powder served in a handmade Lucite Palette. This will be fun for me, it will be my first time documenting a dish from beginning to end. I hope you like the results! Randy Hickey

Upcoming Cooking Classes....


I am very excited about our first Cooking classes, they will be conducted as focus groups to get feedback on what we need to do better. There is an excitement in the air and it is very comforting to know that not only am I doing what I love but I am helping others in the process!!

Still working.


We are still working on getting the site put together. Who knew it took so much to get done. I need to take a lot more pictures and video of techniques and plated dishes, let's hope I can learn to edit video and use a camera in a hurry!
